CHEESY BRUNCH ROLL-UPS

INGREDIENTS:
  • 2 cups sliced fresh mushrooms
  • 1/2 cup sliced green onions (optional)
  • 1/2 cup sliced green pepper
  • 2 Tbsp butter
  • 8 7-inch flour tortillas
  • 1-1/2 cups shredded cheddar cheese
  • 4 beaten eggs
  • 2 cups milk
  • 1 Tbsp flour
  • 1/4 tsp garlic powder
  • A few drops of Tabasco sauce
  • 1/2 cup shredded cheddar cheese for topping

DIRECTIONS:
  1. In a saucepan cook mushrooms, onion, and green peppers in butter until tender. Drain.
  2. Dividing mushroom mixture evenly, spoon along center of each tortilla. Divide the 1-1/2 cup of cheese among the tortillas.
  3. Roll up tortillas and place, seam side down, in a greased 12 x 7 inch baking dish.
  4. In a bowl stir together eggs, milk, flour, garlic powder, and pepper sauce. Pour over rolled up tortillas.
  5. Bake in a preheated 350* F oven for 35 to 40 minutes or until set. Sprinkle the 1/2 cup cheese over top. Let stand 10 minutes. Cut and serve.

To Make ahead: Prepare as above, except do not bake. Cover and refrigerate 2 to 24 hours. Bake, uncovered, in a preheated 350* F oven for 45 to 50 minutes.
